Amazing cupcakes!

Starting this week we will be doing themes for the days of the week :) Today is going to be Make it Monday!
I have taken to baking and love trying new things and since I am young that means pretty much EVERYTHING is new ;)

For today I made carmel filled chocolate cupcake topped with roasted marshmallow! I am not a sweets person but my husband is and he is what inspired these cupcakes and let me tell you I actually LOVE these!

Made some minis for the little ones!

Melt in your mouth moist!

These are so easy because you dont have to frost! 

On the Mini ones I cut these into 1/4s and put on the top, put one whole marshmallow on a big cupcake.

Here is the recipe that I used! It yields around 24


1 1/3 cups all-purpose flour
1/4 teaspoon baking soda
2 teaspoons baking powder
3/4 cup unsweetened cocoa powder
1/8 teaspoon salt
3 tablespoons butter, softened
1 1/2 cups white sugar
2 eggs
3/4 teaspoon vanilla extract
1 cup milk



Directions

      Preheat oven to 350 degrees F . Line a muffin pan with paper or foil liners.

Sift together the flour, baking powder, baking soda, cocoa and salt. Set aside.
   
   In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well with each addition, then stir in the vanilla. 

Add the flour mixture alternately with the milk; beat well. Fill the muffin cups 1/2 full.

Put into the oven and bake for 13 min. With a small corer use core out the middle and fill it with carmel syrup. Put the cake back into the middle and put a marshmallow on top. 

Place back into the oven for 5 min to let the marshmallow melt on top! 

Take out and let cool then enjoy :)
